Patra Recipe or Alu Vadi or Patode or Patod all are different names of one dish made with colocasia leaves /arbi ke patte.

Patra is a dish from Gujrat but in Maharashtra also it is equally popular. I have tasted both versions of Patra and they are quite similar .

To make Patra Recipe we need colocasia leaves / arbi ke patte then coat these leaves with a mixture of gram flour / besan and some spices. Layer all coated leaves and roll them. Steam in a steamer, then cut into small pieces. Then after that you could deep fry these or sauté in pan what ever you like.

I am using pan fry version to avoid use of more oil. Best part is that you can have it as snacks or you could also make it’s curry . Colocasia leaves are nutritious and tasty . This dish is served with Green Coriander chutney or Tomato chutney /sauce . It tastes really delicious and you will not regret the efforts to make it.

Ingredients

  • Colocasia Leaves – 6

  • Besan(Gram Flour) – 1cup

  • Turmeric powder(Haldi) – 1/2 tsp

  • Red chili powder – 1/2 tsp

  • Salt to taste

  • Jaggery powder – 1/2 tsp

  • For Tempering
  • Oil – 1tbsp

  • Mustard Seeds – 1/2 tsp

  • Sesame Seeds – 1/2 tsp

  • Coriander Leaves – chopped

  • Lemon juice – 2 tbsp.

Directions

  • Wash and wipe Colocasia Leaves.
  • Slit hard stems.
  • Keep aside.
  • For Gram Flour Batter
  • Take a bowl add gram flour, turmeric powder, chili powder, salt, jaggery powder into it.
  • Slowly add water to make a thick batter.
  • Apply Batter to Leaves
  • Now Place one leaf on your workspace and spread a nice amount of prepared batter on it.
  • Now place another leaf in opposite direction to the first leaf.
  • Spread batter.
  • Repeat step 2,3 for the third leaf.
  • Now fold the sides first then from the center to make a roll out of these leaves. One roll is ready with 3 leaves.
  • Repeat above process for rest of the three leaves and make another roll.
  • Steam the Rolls
  • In a steamer take enough water to steam rolls.
  • Apply some oil to your tray.
  • Place Patra rolls on to it.
  • Steam for around 10-12 minutes.
  • Take out and let it cool.
  • Once cooled cut into pieces.
  • For Tempering
  • Take a pan and heat some oil.
  • Once its hot , add mustard seeds, let it splutter.
  • Add sesame seeds and saute well.
  • Add Patra pieces and cook till they become crispy and golden/ brown .
  • Add lemon juice and coriander leaves.
  • Serve hot with chutney or sauce.

Tips

  • Apply batter to only one side of the leaf.
  • While tempering turn Patras gently so that they do not break.
  • Jaggery Powder can be replaced by sugar or even if you don’t like sweetness in this recipe you can skip.
  • If you don’t have lemon juice you can add some Tamarind Pulp while making Gram Flour batter.
