Sweet Potato Halwa / Dessert or Shakarkand halwa is a highly nutritious , easy and quick snacks to cook at home. This Navratri festival you could try this while fasting.

Sweet potato is not only a good nutritious vegetable for those who are fasting but it can be added in your daily diet through out the year due to it’s high nutritious values. It’s easily available through out the year and one of the most nutritious vegetables around.

Apart from Sweet potato halwa we can also use Sweet potato to make cutlets / tikki , kheer / pudding , fries , chat , paratha etc. I am sharing sweet potato halwa recipe here because I like it most.

Sweet potatoes are good source of fiber, vitamins, and minerals . They have many health benefits like they helps boost immunity , they are good for skin and helps reduce weight. They are also known to maintain healthy vision and good brain.

There are different types of sweet potatoes available in the market like white , purple , red , yellow , brown . I have used the purple one here .We can eat sweet potatoes by baking or boiling them.

For this recipe you first need to boil sweet potatoes then peel them. Then mash them and roast. You will also need milk powder , sugar , nuts , cardamom powder to cook this.

So lets see how to make this recipe.

Ingredients

  • 1 Tbsp. Clarified Butter / Ghee

  • 10-12 Cashews

  • 2 Sweet Potato(Boiled and Peeled)

  • 1/4 cup Milk Powder

  • 1/4 Sugar(More or less as per your taste)

  • Pinch of Cardamom Powder (optional)

Directions

  • Mash/ Grate Sweet Potato and keep aside.
  • In a pan heat clarified butter or ghee .
  • Add cashews and slightly roast them for around 30 sec on medium flame.
  • Take out roasted cashews and keep aside.
  • Add sweet potato in same pan and cook them for 2 minutes.
  • Add milk powder and mix.
  • Add sugar and mix everything well. Sugar can be added based on your taste and health needs.
  • Sugar releases water so cook until it becomes thick.
  • After 2-3 minutes mixture will start coming together.
  • Cook until ghee separates.
  • Add Cashew nuts and serve hot , warm or cold.

Tips

  • For smooth texture grate sweet potato.
  • If you do not have milk powder add some Khoya or Mawa.
  • Based on your health needs you could add Ghee , Milk , Sugar . Use low fat milk if you avoid fat in your diet.
