Veg Fried Rice| Chinese Fried Rice

Veg Fried Rice / Chinese Fried Rice / Simple Fried Rice is cooked mainly using cooked rice and frying them with a combination of vegetables of your choice. Add some sauces and serve hot.

Fried Rice can be made with many variations like Chinese style fried rice, schezwan fried rice , paneer fried rice etc .

For non veg also there are many variations of fried rice like egg fried rice , chicken fried rice etc.

You could use vegetables and sauces of your choice and customize the dish according to your taste .

It’s a quick meal that you could try with many variations and is liked across globe through out the year.

Lets see how to make veg fried rice:

  • First you need to cook rice. For cooking rice take 1 cup any long grain rice/ basmati rice and cook it with sufficient water with some salt and few drops of oil. Oil prevents rice from sticking.
  • If you want to pressure cook rice then add 2 cups of water for 1 cup rice and cook on low heat till whistle comes. After 1 whistle turn off heat and let it cool itself in pressure cooker only.
  • If you want to cook rice in an open pan then boil 4-5 cups of water and once water starts boiling add 1 cup rice, some salt and few drops(2-3 drops) of oil. Once cooked drain off excess water and let it cool.
  • Another quick way to cook rice in pan is simply put the rice in pan , spread the rice across pan and put the water up to the level it reaches 2 cm above the rice level. Let it cook until you don’t see any water in pan. This needs a little bit monitoring , pick one rice and see if it’s cooked, if not then add more water and if cooked and you still see water then stop cooking and drain the water. With the water level I suggested I never need to drain off or add any more
  • Once rice is cooled completely, start frying them.

Ingredients

  • 1 tbsp. – Oil

  • Spring Onion White – 1/2 cup

  • Crushed Garlic – 1 tsp

  • Ginger Paste – 1 tsp

  • Grated Carrot – 1/2 cup

  • Finely chopped Capsicum – 1/2 cup

  • Cooked and Cooled Rice – 2 cups

  • Salt to taste

  • Crushed Black Pepper – 1/2 tsp

  • Soy Sauce – 1 tbsp.

  • Vinegar – 1 tbsp.

  • Spring Onion Greens – 2tbsp.

  • you can also add some Chili flakes.

Directions

  • Cook 1 cup long grain basmati rice with some salt and few drops of oil to avoid sticking, then let it cool.(1 cup raw rice makes 2 cups cooked rice)
  • In a wok/ pan heat oil.
  • Add onion/ spring onion whites.
  • Sauté for 30 seconds or until translucent.
  • Add ginger-garlic paste/ crushed. Sauté for 20-30 seconds.
  • Add vegetable (carrot, capsicum), fry for 30-40 seconds.
  • Add cooked and cooled rice, salt, crushed black pepper. Mix everything.
  • Now add soya sauce, vinegar and mix softly. Cook for another 30-40 seconds or until everything is mixed properly.
  • Garnish with some spring onion greens and serve hot.

Tips

  • Always make fried rice with cooled rice. If you try to make fried rice with hot/ warm rice then rice can break.
  • Do not overcook vegetables, there must be some crunchiness in vegetables.
  • You can add any vegetables , sauces of your choice.
  • Served hot.
